    At last - someone as geeky as me when it comes to Pizza. Friday night is always my pizza experiment night. Currently trying to imitate a calzone that we eat at a local restaurant. It tastes great but having difficulty with making the dough 'strong' enough to take the handling and build up of air in the calzone - this causes leaks in the dough. I am using a strong white flour and almost identical recipe to you. Pizza stone/500 deg oven. Not tried the overnight rise you suggest - next friday I guess.
